What is ORGANIC COFFEE?
Organic Coffee is grown without the use of any
pesticides, insecticides, or synthetic fertilizers.
By growing coffee with the use of these farming techniques, agriculture is sustained!
This also promotes the quality of soil, ecosystems & groundwater supplies.
Coffee trees are grow in subtropical & tropical regions at altitudes ranging from
sea level to 6000 feet.

As We Feel They Are Higher Quality and More Flavorful.
What is the difference between Arabica & Robusta?
The most important difference is how the beans are processed.
Wet and/or washed processing methods are used primarily for Arabica Beans.
Dry and/or unwashed methods are used for Robusta Beans.
WHAT IS THE DIFFERENCE BETWEEN WET & DRY PROCESSING METHODS?
Pulp is removed from the cherry after sorting & cleaning to expose the seed
The way the pulp is removed from the cherry is the key difference between
The wet and the dry methods.
The wet process:
Primarily for Arabica beans, involves putting cherries through a pulping machine
that breaks down the outer skin & removes the pulp.
The beans are cleaned with water & washed clear than sun dried for 2-3 days.
they are sorted according to shape, colour & density.
Washed beans have a greater acidity, fuller body & clean flavour
from having less exposure to the elements.
the dry process:
Primarily for Robusta beans, involves putting cherries through a husking machine
that removes the dry pulp & parchment.
During a period of 2-3 weeks cherries are partially dry on the trees & are finished off
with sun drying & racked frequently to dry faster.
Dry beans may have a heavier body, yet can develop off-tastes
from having more exposure to the elements.
WHAT DOES ROASTING DO TO THE BEAN?
Coffee Roasting transforms the green beaninto an aromatic & flavourful
Coffee bean That can Range in Colour from a Matte Tan to a Shiny Black
Depending on the type of Roast :
City Roast, Vienna Roast, Italian Roast or French Roast
As the coffee bean roasts, moisture is given up & the sugars in the bean
begin to caramelize to develop
the individual flavour characteristics to the different blends.
